Hello!!!
I am back with another one of my “recipes”. The winter is knocking at our doors I am in all the mood to say a big fat hello! This also means that my sweet cravings are back. Along with the tendency to put on weight. But hey, that is a different matter.
Here is a recipe of my version of my all time favorite Eclairs. It’s an easy one, so all you need is an hour at hand and that a lot of love. I have also fine tuned my choux and the result was perfect!

Cooking time: 45 minutes
Ingredients:
For the Choux Pastry;
1/4 cup milk
2 tbsp sugar
1/2 stick of butter
2/3 cup all purpose flour
2 large eggs
For the caramel sauce:
4 tbsp sugar
1/4 cup milk
2 cubes of butter
2 tbsp water
1 cinnamon stick
Directions:
First off, preheat your oven at 200C.

~ In a saucepan add the milk, sugar, butter and bring it to a warm temperature (Let the butter melt).
~ Now, add the plain flour in the saucepan and whisk till the mix becomes sticky and starts leaving the sides of the pan. (This won’t take more than 1 minute)
~Let the mixture cool a bit.
~ Beat in the eggs, one at a time, until the mixture is smooth and glossy and has a soft dropping consistency. (almost like mashed potatoes)
~ Lightly grease a large baking sheet. Using a piping bag, pipe the mixture into strips in lines across the baking sheet. Gently rub the top of each ball with a wet finger – this helps to make a crisper top.
~ Bake for 25-30 minutes at 200C, or until golden-brown.

Tadah! Your eclairs are DONE!
Caramel Sauce:
~ Put the sugar in a sauce pan. Let it melt a bit and then add the butter, milk and whisk. Add the water if you think the consistency is too thick.
~ Take the pan off the heat if you think the caramel is burning.
~ Add the cinnamon and you’re done.
Just be careful while making the caramel, if you don’t stir it and keep taking it off the heat it can burn.
Voila. Eclairs with caramel sauce.
Assembling;
~ You can cut open the eclairs and make a small sub with fruits as a filling.

~ You can also dip the eclairs in chocolate sauce.
~ Or you can pour some hot caramel sauce over your eclair tower (that’s what I am calling it) and grin like a little child.
